Honey-Roasted Applesauce

This apple sauce recipe is simple, but offers two smart ways to add flavor. Honey helps both to sweeten the applesauce, but also draws out the natural sugars and flavors in the apples as they cook. And browned butter gives the applesauce a deep, caramel richness that can't be beat. Use your favorite eating apples for this — we tend to like slightly tart apples, such as McIntosh or Gravenstein, but feel free to use what you love best. Avoid Red Delicious — the results can end up tasting mealy.
